Teriyaki Turkey Burgers

These sesame-teriyaki burgers are super flavorful — even more so when topped with grilled scallions. They'll make a super addition to your July 4th.




Ingredients


1 1/4 pound(s) lean ground turkey

1 Tbsp ginger root, fresh, finely chopped
1 Tbsp minced garlic

1 tsp sesame oil

1/4 cup(s) teriyaki sauce
1/4 cup(s) scallion(s), chopped

2 Tbsp cilantro, fresh, finely chopped
1 large egg white(s)

2 spray(s) cooking spray
8 medium scallion(s), root ends trimmed

4 item(s) reduced-calorie hamburger roll(s)

Instructions

  • Preheat a grill (or grill pan) to medium-high; cover to maintain heat

  • In a large bowl, combine turkey, ginger, garlic, sesame oil, teriyaki sauce, chopped scallions, cilantro and egg white; mix thoroughly with your hands or a spoon.

  • Make 4 burgers, about 3 1/2-inches across and 3/4-inches wide.

  • Place burgers on a nonstick baking tray; coat with cooking spray. Flip burgers and coat other side with cooking spray.

  • Place burgers on heated grill (or grill pan) and cook, flipping once, until fully cooked, about 5 to 7 minutes per side. A few minutes before burgers are done, place whole scallions on center of grill and cook, turning once, until bright green and charred, about 2 minutes.

  • Remove burgers and scallions to a plate; lightly toast rolls on grill. Serve each burger on a roll topped with 2 scallions.

First off, I apologize that I have been slacking on updates. The past two weeks have been crazy with Easter, DS' 9 month appointment, and traveling!

I guess we should have a check in for this week, right?

high point: I was extremely relieved after indulging in WAY too much Easter candy that I still lost!
what i'm struggling with: Along with what I said above- it's really hard around holidays not to give in to things like candy and just eating more over-all!
tips/suggestions: I don't keep candy/sweets in the house. If it's around I will have DH take it to work or pawn it off on someone else!
bio: I am a 24 year old mama getting ready to rejoin the workforce! I am nervous about leaving LO in daycare, but excited to get back to being productive creatively and contributing to our family financially!

tips/suggestions: Get a buddy!!! i've been doing this w/ my mom and best friend and its so much easier having extra support and someone to go walking with!

Bean & Pasta Soup (3 points)

Ingredients:

1/2 c pinto beans
1/4 c whole wheat cooked pasta
1/4 c onion
1 slice canadian bacon, uncooked
1/8 tsp rosemary
1 c fat free chicken broth

Combine all ingredients into a saucepan and simmer for 5 minutes. Add a roasted garlic clove for taste! It was so filling because of the beans and the pasta. Lots of fiber, and definitely not lacking in taste because the rosemary and chicken broth added tons of flavor.
